Ingredients
  

  • 1 lb chicken breast diced
  • 1 tbspb olive oil for cooking
  • 1 tbsp for cooking
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • to taste salt & pepper
  • 8 small corn tortillas
  • 1/2 cup diced tomatoes optional
  • 1/4 cup chopped onions optional
  • 1/2 cup shredded lettuce optional
  • 1/4 cup shredded cheese optional
  • 1/4 cup sour cream optional

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced chicken and cook until browned (about 5–7 minutes).
  • Sprinkle in spices (chili powder, cumin, garlic powder, paprika, salt & pepper).
  • Stir and cook until chicken is cooked through (internal temp: 165°F)
  • Warm tortillas in a dry pan or microwave.
  • Fill tortillas with chicken and your favorite toppings.
  • Serve immediately and enjoy!

Notes

  • You can substitute chicken with tofu or shrimp for variety.
  • Great served with lime wedges or guacamole on the side.
